Beef Burgers with Cauliflower and Tahini Mash
very lean minced beef
small red onion
Black pepper/pinch salt
garlic – crushed
zest and juice 1 lemon
natural yogurt/Greek yogurt/Quark
Put all ingredients into a food processor and whizz/pulse until mixture has combined, but it still has texture.
Wet your hands as this will stop mixture sticking to them, and form meat mixture into even-sized burgers.
Smear a griddle pan/fry pan with a little olive oil to prevent sticking, and cook burgers for about 2-3 minutes each side, until cooked through (or rare if you like them like this).
Cut the cauliflower into florets and place in a large pan.
Steam in about 2” water until cauliflower is tender, but not too soft.
Put steamed cauliflower into a food processor with all the other ingredients and whizz until a smooth mash. Season with salt/pepper. Can add herbs of choice.
