Ingredients
- Pasta with Lentil Bolognaise
- 12 oz wholewheat or non-wheat pasta
- 3 tbsp vegetable stock
- 1 onion chopped
- 2 carrots finely chopped
- 1 large courgette
- 14 oz can chopped tomatoes
- 14 oz cooked lentils follow instructions on back of pkt.
- handful mixed chopped herbs – fresh!

Instructions
- Saute vegetables in stock until soft.
- Meanwhile cook the pasta.
- Add the tomatoes, lentils and herbs to the vegetables and reduce down until the sauce is thickened.
- Add the lentils to the sauce.
- Drain pasta and serve with the lentils.
