- lettuces
- spinach leaves
- rocket leaves
- watercress
- raw cabbage
- tomatoes
- sugar snap or mange tout
- carrots
- cauliflower florets
- broccoli florets
- beetroot
- fennel
- mushrooms
- apple slices
- red green, yellow peppers
- celery
- onion - spring or red
- courgettes/cucumber
- fresh herbs (parsley chives, coriander, fennel)
- 2 tbsp Tinned chick peas
- 8 small cubes of feta
- olives
- 7 fl.oz olive or linseed or sunflower or walnut oil;
- 2 fl.oz balsamic or white wine vinegar or combination
- 1 clove garlic crushed
- 0.5 tsp mustard
- tsp half tsp. honey
- salt/black pepper

Instructions
- Put all the dressing ingredients into a clean jam jar - pop on the lid and give it a good shake. Keep in fridge for a couple of weeks and it is ready to use whenever you have a salad!
